Just buy it from the Traveling Cart if you're not into the whole waiting game. Sometimes she sells it. Not the DIY route, but hey, it works.

To get maple syrup in Stardy Valley, you gotta tap a maple tree! First, craft or get a Tapper. Then, slap that Tapper onto a grown maple tree and wait. After about 7 to 8 in-game days, boom, you'll have yourself some sweet maple syrup.
