To catch albacore in Stardew Valley, you gotta hit the oceans! These fish are only available in Fall and Winter. So, grab your fishing rod and head to the beach. Remember, they're only biting from 6am to 11am and then again from 6pm to 2am. Happy fishing!

I spent like an eternity fishing for albacore because I thought any sea fish could be caught anytime. Nope. Got to do it in Fall/Winter, early in the morning or late at night. Learned it the hard way, so you don't have to.
