To get amaranth in Stardew Valley, simply head on over to Pierre's General Store and buy the seeds. They're available in the Fall, so mark your calendar! Once you've got your seeds, plant them in your farm and water them for 7 days. Voil脿, you've got yourself some amaranth!
Pro tip: Aside from Pierre's, check the Traveling Cart on Fridays and Sundays. Sometimes they sell amaranth seeds too, and not just in Fall. Saved my recipe quest more than once!
