To get Apricots in Stardew Valley, you need to plant an Apricot Sapling. Head over to Pierre's General Store during Spring, where you can buy one for 2,000G. It takes 28 days to mature, but once it does, you'll get Apricots in Spring every year. Remember, it doesn't produce fruit in Winter!

Honestly, just wait for Spring and buy an Apricot Sapling from Pierre's for a quick 2k Gold. Plant it, wait a season, and boom, apricots every Spring after that. Easy-peasy.

If you're in a pinch and need an apricot ASAP, check the Traveling Cart on Fridays and Sundays. Lady luck might be on your side, and you could find an Apricot for sale. It's a bit random, but it's saved me more than once when I was trying to complete the Community Center bundles.
