Easiest way? Get yourself a cow, milk it using a Milk Pail, and then chuck that fresh milk into a Cheese Press. Voila, you've got cheese! Don’t forget, Cheese Press is a must, and it comes after you hit Farming Level 6.

Just buy it from the Traveling Cart if you're too lazy to farm. They sometimes have cheese for sale. But honestly, milking your own cow and making it feels more rewarding.
