Just buy it, lol. Seriously, if you're not into the whole mining adventure, Clint the Blacksmith sells copper ore for 75g a piece. It's a bit pricey, especially early in the game, but it's an option if you need copper in a pinch and don't wanna deal with the mines.
Getting copper in Stardew Valley is pretty straightforward. You need to head into the mines, which you'll find just east of Linus's tent in the Northeast corner of the map. Once you're in the mines, start breaking rocks! You'll find copper ore in there. The deeper you go, the more likely you are to find it. Don't forget to bring your pickaxe, and watch out for those pesky slimes!
Just mine it. Copper's everywhere in the early levels of the mine. If you're not finding it, you're not swinging that pickaxe enough.
