Just go mining in the first 40 levels of the mines. Earth Crystals are all over the place there.

Earth Crystals? Walk in the mines and break rocks. You'll trip over them eventually.

Earth Crystals are pretty easy to snag if you know where to look! Dive into the mines, especially between levels 1-39. These shiny little things usually pop up on the floors of the mine, so keep your pickaxe handy and smash any rocks you find. They sometimes also appear in geodes, which you can crack open at the blacksmith's for a small fee. Happy mining!

Honestly, just keep hitting rocks in the mine and you'll find plenty. I've got more Earth Crystals than I know what to do with by just playing the game. Also, check the traveling cart on Fridays and Sundays, they sometimes sell them.
