Actually, cutting down all the trees and expecting mushroom trees to pop up is a no-go. You need stumps in fall. It's a nature's lottery, really.

To get Mushroom Trees in Stardew Valley, you gotta let some of your stumps just chill out and not clear them all away. During the fall, there's a chance these stumps can turn into Mushroom Trees. Keep your fingers crossed for rainy days, 'cause that's when the magic happens!
