Been there, done that. And trust me, it's all about the bouquet from Pierre's shop. I gave one to Leah, and boom, we were on the fast track to 10 hearts. Keep those gifts coming too; they love it!

To get past 8 hearts in Stardew Valley with any of the bachelors or bachelorettes, you'll need to gift them a bouquet, which you can buy from Pierre's General Store for 200g. You can't get past 8 hearts without doing this, as it signifies your intentions to get more serious. After you've given them the bouquet, continue to interact and give them their favorite gifts to reach 10 hearts!
