Honestly, getting Prismatic Jelly is more luck than strategy. Make sure you've got the quest active, or you'll be fighting slimes for no reason. Head into the mines with plenty of food and keep an eye out for those shiny Prismatic Slimes. Took me a few days of mining, but finally got that jelly!
