To get the mushroom cave in Stardew Valley, Demetrius will visit your farm when you've got at least 25,000G in total earnings. He'll give you a choice between bats (which bring fruit) and mushrooms for the cave on your farm. Choose mushrooms, and he'll set it up for you. After that, different kinds of mushrooms will grow there, which you can harvest and use or sell!
