You can't really get truffles in Winter the old-fashioned way because pigs won't go outside to forage truffles in the snow. BUT, you can still get truffles by putting pigs in a Deluxe Barn equipped with an Auto-Grabber. They won't find truffles outside, but they can sometimes produce them in the barn during Winter if you're lucky.
