Golden Walnuts are what you're after, not regular walnuts from trees! Explore Ginger Island thoroughly; puzzles, monsters, and just around the corner spots can reward you with those. It's a treasure hunt!

lol u can't shake trees for walnuts in Stardew Valley. U thinking of coconuts on Ginger Island maybe? Anyway, for Golden Walnuts, just explore the island, do puzzles, and check everywhere. They're all over the place but not in regular trees.
