Don't bother planting mushrooms! Just get the cave going by choosing mushrooms when Demetrius stops by. No need for seeds or watering, just collect your mushrooms every couple of days.
Actually, if you're thinking about growing mushrooms the way you do tomatoes, can't do that in Stardew. Mushrooms pop up in a special cave on your farm after Demetrius does his magic. Choose mushrooms, not bats, when he asks. That cave will be your mini mushroom farm.
