Just wait till they're big and ripe, then click or tap on them. Melons take 12 days to grow, so don't rush them!

To harvest melons in Stardew Valley, just walk up to them once they're fully grown and hit the 'use' button (right click on PC, 'A' button on Xbox, 'X' on PlayStation, and 'B' on Nintendo Switch). If your inventory's not full, the melons will pop right into it!

Swipe, click, or press the action button, folks. Melon harvesting's as easy as pie. Make sure they've had their 12 days in the sun first though.
