To harvest parsnips in Stardew Valley, walk up to the fully grown parsnip crops and press the right mouse button if you're on PC, or the corresponding action button on your console or mobile device. It's super easy, just make sure they're fully grown; they typically take 4 days to grow!

Don't overthink it; you just walk up and interact. If you've been watering them and they're ready, they'll pop right into your inventory. Watch the days though, 4 days to ripe!
