Harvesting parsnips in Stardew Valley on Switch is easy-peasy! Just walk up to the fully grown parsnip crops (they take about 4 in-game days to mature) and press 'A'. Boom! Parsnips harvested.

As a seasoned Stardew Valley farmer, I'd say timing is key. Make sure they're fully grown (look for a bright yellow top). Then, just press 'A' on your Switch controller to harvest. Happy farming!
