You can mute a server and hide its notifications. Just right-click the server icon and select 'Mute Server'. This won't fully hide it but it'll stop it from bothering you.
If you want to keep things clean, log out of the unused servers. Keeps your list neat and tidy!
Change your notification settings to hide specific servers from bothering you. Right-click the server, go to 'Notification Settings' and customize as needed.
Just leave the servers you don't need to make your list shorter. Clean and simple!
