Honestly, after the curry simmers for about 20 minutes, the chicken should be cooked through. That's the rule of thumb I follow!
Use a meat thermometer! If the chicken reads 165掳F (75掳C) at its thickest part, you're good to go.
Cut a piece in half. If there's no pink and it's white all the way through, it's done.
