To learn the stonecutter, you'll need to find and mine Iron. Smelt that Iron and then you'll unlock the stonecutter recipe. Also, build a Forge first if you haven't!

You gotta mine Iron and smelt it. Once you smelt Iron, you'll unlock the stonecutter. Simple as that!
