Chop every tree you see (mind your energy levels though), forage every wild item, and make it a point to explore the map thoroughly. Seasons change and so does the forage available. More variety = more XP.
Honestly, just play the game. Foraging levels up as you do what comes naturally in the game: exploring and gathering. Doesn't need a strategy guide to tell you that.
Pro tip: Focus on upgrading your axe as soon as possible. A better axe means you can chop down trees faster, saving energy and time, which lets you forage even more. It's like an investment in your foraging future.
