From personal experience, the best memory demons have a good balance between being challenging and fair. Players should feel rewarded for remembering the layout, not frustrated. So, when designing your level, introduce new patterns gradually and give players 'safe' spots to catch their breath. Most importantly, have fun with it! The more unique your level, the more it'll stand out.
