I make Thai chicken curry by first sautéing onions and garlic, then adding green curry paste and cooking it for a couple of minutes until fragrant. Then I throw in chicken pieces, stir till they cook a bit, and add coconut milk. Toss in veggies like bell peppers or bamboo shoots, and let it simmer. Throw in some fish sauce, lime juice, and a bit of sugar for balance, then serve it hot with rice!

Honestly, the easiest way is to get a good quality Thai curry paste from the store. Heat oil, fry the paste, add chicken, coconut milk, veggies, and let it all simmer. Add fish sauce and lime juice to taste. Enjoy!

Start by heating some oil in a pan, then add garlic, ginger, and your choice of Thai curry paste (red, yellow, or green). Cook for a minute till fragrant. Add chicken pieces and cook until they are no longer pink. Pour in coconut milk, add veggies like bell peppers and bamboo shoots, and let it simmer until everything is cooked through. Season with fish sauce and lime juice. Serve with jasmine rice. Yum!
