Making aged roe in Stardew Valley is pretty simple, but you need a Preserves Jar or a Keg. First, catch some fish using your fishing rod, then place the roe from the fish in either the Preserves Jar or Keg. Wait a bit, and boom! You've got yourself some aged roe. It sells for more than regular roe, so it's definitely worth the extra step!

You actually need a cask, not a jar or keg, to age roe to its finest quality. Put the roe in the cask, wait around 7 days, and you'll have some top-tier aged roe. Worth the correction!
