I've made Chettinad Chicken Curry a hundred times. Marinate chicken with turmeric, chili powder, and salt. Roast and grind the spices (fennel, peppercorns, red chilies). In a pan, saute onions, ginger, garlic, and curry leaves. Add tomatoes, cook down, then the spice mix. Add the chicken, cook on low till done. It's a flavor bomb!
