Add a little cornstarch slurry (cornstarch mixed with water) to your curry. Stir it in slowly and let it simmer until it thickens up!
Use coconut milk instead of water. Not only will it thicken it, but it'll also taste amazing!
Reduce it by simmering it uncovered for a while longer. Patience is key here.
