From my experience, you can keep it mild by using a light curry paste and adding more veggies like carrots or potatoes to balance the spice.
Skip the curry powder and use chicken broth with a dash of soy sauce and a hint of turmeric. Subtle but tasty.
Just use less curry powder and add more coconut milk. That should keep it mild but flavorful!
