First things first, you gotta unlock the Island Farmhouse. To do that, repair Willy's old boat at the back of the beach (bring some hardwood, ya know?) and head over to Ginger Island. Once you're living the island life, fix up the farmhouse there, and voila, you'll find yourself with the blueprint for the Ostrich Incubator. Just grab 50 hardwood, 20 cinder shards, and 1 ostrich egg. Craft it and place your precious ostrich egg inside. Patience, young farmer, and soon you'll have a leggy bird prancing around your farm!
