To make your own hay in Stardew Valley, you gotta have a Silo first. Build one through Robin at the Carpenter's Shop. Once you've got that Silo up, just cut down grass with your scythe and voilà, the hay gets stored automatically in the Silo. Easy peasy, you're now a hay-making champ!

Just scythe wild grass after getting a Silo. Have at least one chicken or it goes nowhere.

Don't buy hay if you can make it, especially early game. Fill that Silo before winter hits, or your animals won't be thanking you. Trust me, running out of hay when it's snowing is not fun.
