Moving the bouncer in Stardew Valley is actually part of a quest. You'll need to gain access to the casino. To do that, complete the 'The Mysterious Qi' quest. You'll find a secret note directing you to place a battery pack in the lock-box in the tunnel next to the bus stop, leading to more steps. Follow the quest line, and you'll eventually get the club card required to pass the bouncer.

To get past the bouncer, it's all about that club card. No amount of sweet talking or gifts will move that mountain of a bouncer, so focus on completing 'The Mysterious Qi' quest to get your hands on that club card.

Trust me, I tried everything from offering gifts to sneaking past. Nothing works except the quest. Don't waste your time like I did!

Honestly, just do the quest. There's no secret handshake or backdoor, unless you're into mods, but that's a whole different ball game.
