Sorry, you can't pick up a boat directly. The best way is to dismantle it with your hammer and rebuild it later.

You have to destroy it with your axe or hammer and then gather the materials to rebuild it at a new location.

You can't just pick up a boat in Valheim, but you can dismantle it! Use your hammer, right-click, and select the boat to deconstruct it and get the materials back.
