I usually make chicken curry soup by first frying onions, garlic, and ginger in oil. Then I add chopped chicken and spices (curry powder, turmeric, cumin). When the chicken is nicely browned, I pour in chicken broth, coconut milk, and a can of diced tomatoes. Let it all simmer until the chicken is cooked and tender. Top with fresh cilantro and a dash of lemon juice!
