Quit Stardew Valley? Blasphemy! But if you really must, just hit 'Esc' to bring up the game menu, and you'll see the 'Exit to Desktop' option in a PC or 'Save and Quit' on consoles. Remember, your farm will miss you!
Just close the application or game console like any other game. There's no special trick to it.
Can't really quit if you never start. Stardew Valley is too good to leave though, why quit?
