To restart your day in Stardew Valley, it's as simple as quitting the game without saving and then reloading your last saved game. Just hit escape to bring up the menu, select 'exit to title' and confirm. When you start the game again, you'll begin at the start of your last saved day, effectively erasing any progress or mishaps of the day.

Quick tip: If you're on console, just close the game entirely without saving. On PC, alt+F4 will do the trick in a pinch. Remember, Stardew Valley only saves at the end of each day, so anything you do can be 'undone' if you exit before going to bed.
