How to Save Emma in The Quarry
To save Emma, make sure to keep her armed by finding the bear spray and stun gun in Chapter 2. Don't let her get bitten in Chapter 4 by succeeding in the QTEs when she encounters the creature! Also, avoid opening the trapdoor in the firewatch tower.

From my playthrough, I kept Emma safe by always choosing cautious and protective dialogue options. She managed to survive, no injuries, by the end of the game!
You can save Emma by making sure she stays armed and avoiding risky decisions, especially that trapdoor in the tower.
