Just like any other crop in Stardew Valley, to ship bok choy, you need to put it in the shipping box right next to your farmhouse. Wait until the next morning for Lewis to pick it up, and voilà, you've shipped bok choy and made some gold!

Literally just chuck it in the shipping box on your farm. Lewis doesn't judge, he just pays.

I remember the first time I tried to ship bok choy in Stardew; I was so confused. Turns out, all you gotta do is drop it in the shipping box outside your house. Next morning, you got gold. Easy peasy.
