You can't turn off Quick Chat unless you're over 13 and have an Innersloth account. If you meet those requirements, just go into Settings and switch to 'Free or Quick Chat'.

I turned off Quick Chat by tapping on the gear icon in the main menu, going to the 'Data' tab, and choosing Free Chat. It works like a charm!
