Actually, you can't turn into Devil Jin in Tekken 5. He's his own character in the roster. Trust me, I've tried!

Just start the game, go to character selection, and pick Devil Jin from the list. Easy peasy!

To play as Devil Jin, go to Practice Mode or Time Attack. He's right there on the character screen.
