You can revert back to the older Discord UI by heading into User Settings > Appearance > and selecting 'Legacy Chat Input'.

From personal experience, I've found using BetterDiscord with a custom theme can make the UI look more like the old one.

There's no official way to completely switch back to the old UI. You might have to get used to the new one. Sorry!
