Unlocking the sewer in Stardew Valley Expanded is just like in the base game. First, you gotta collect at least 60 different items and donate them to the museum. Once you've done that, Gunther will visit you the next day and give you the Rusty Key. This key unlocks the sewer. So, start hunting for those artifacts and minerals!

Actually, I found that just rushing to donate to the museum kinda ruins the fun of exploration. Take your time, enjoy the game, and the sewer will unlock when it's supposed to. No rush!
