Just hit up Willy at the beach shop! You can't technically 'upgrade' the pole you have, but you can buy better ones from him. Save up those coins for the Iridium Rod if you're serious about fishing.

To upgrade your fishing rod in Stardew Valley, you'll need to visit Willy's Fish Shop by the beach. After a few days into the game, Willy will send you a letter that he has fishing rods for sale. Initially, you can buy the Bamboo Pole from him. As you progress, you'll unlock the ability to purchase better rods like the Fiberglass Rod and eventually the Iridium Rod which allows you to use bait and tackle for better fish catching chances.
