I'd say PC, hands down. The modding community for Stardew Valley on PC is AMAZING. You can customize your game in so many ways that aren't available on the Switch. Better graphics options too.
Honestly, it depends on what's more important to you: Mods and graphics? Go PC. Convenience and cozy gaming on the go? Switch, no question.
Def go for the Switch version if portability is a big deal for you. Nothing beats lying in bed or chilling at the park while tending to your farm. Plus, the controls feel super intuitive on the Switch!
