Colorless, bro. They just reflect the color of whatever's staining them in the lab.
In most images, mitochondria are usually colored artificially. Naturally, they don't have a distinct color. They're like the ninjas of the cell world!
From my experience in bio lab, mitochondria are usually pink or red when stained, but that's more about the dye than their actual color.
