Caviar in Stardew Valley comes from Sturgeon. You gotta catch a Sturgeon, then pop it into a fish pond. Wait for them to multiply and eventually, they'll produce Roe, which you can turn into Caviar with a Preserves Jar. Plus, Sturgeon can only be caught in the mountain lake during summer and winter. Happy fishing!

Honestly, farming caviar from Sturgeon is a hustle. Tried it, loved the profit, but man, those Sturgeons are a tough catch. Worth it though!
