When you 'die' in the mines, you don't really die. You pass out and then Linus or someone finds you and brings you back. You'll lose some money and items, and also some progress in the mines. It's annoying but not the end of your farming career!

Honestly, the mines are a risk vs. reward situation. Dying stinks because you lose items and progress, but it's all part of the adventure. Just dive back in and try again!

Just don't die, lol. But seriously, the penalty can include losing precious items and gold. It's more of a slap on the wrist than a game over, but it still hurts.
