What is Canon in Blue Exorcist?
The canon in Blue Exorcist includes the original manga by Kazue Kato and the first season of the anime. The second season, Blue Exorcist: Kyoto Saga, is also considered canon as it follows the manga more closely.

Just stick to the manga for the purest canon experience.
Only the manga and the first season of the anime are true canon. Kyoto Saga is pretty close too, but some filler episodes can be skipped.
From personal experience, the main manga series and both seasons of the anime align well with the canon storyline. The movies and some filler episodes, however, can be considered non-canon.
