Sap in Stardew Valley is pretty useful, actually! You can use it to craft basic fertilizer, which helps your crops grow better. Plus, if you're into making a bit of extra Gold, you can sell it. Though it doesn't sell for much, it's a good way to get rid of excess if you're chopping down a lot of trees.
