Hands down, the hardest fish to catch in Stardew Valley has gotta be the Legendary Fish, especially the Legend. It only appears in the mountain lake during Spring on rainy days. You'll need a lot of patience, the right tackle, and maybe even a little bit of luck to reel this big guy in. Don't even get me started on the struggle if you're not using an Iridium rod.

Gotta say, it's the Legend for me. Fished for days in-game before it even bit, and then it fights like a beast. Most satisfying catch ever though, felt like a real accomplishment.

imo, people hype the Legend too much. Octopus gave me a way harder time, kept escaping like it was its job. Maybe it's just the way I fish, but that's my take.

I think the hardest fish to catch is the Scorpion Carp. It's in the desert, and you have to deal with that crazy erratic movement pattern. Took me forever to catch that slippery sucker, so save some coffee or something to boost your energy and speed, you'll need it.
