First off, don’t make an omelette! Take that rare Dino Egg and incubate it in a Big Coop. You’ll get yourself a pet dinosaur, which is as cool as it sounds. Not only does it look awesome, but it also lays more dinosaur eggs, which you can sell for a good price, donate to the Museum, or incubate again.

Donate your first one to the Museum. It fills a slot in the collection and Gunther gives you a neat reward. After that, feel free to hatch or sell any others you find.
