Demetrius can usually be spotted chilling at home in the Carpenter's Shop located in the Mountain area, north of Pelican Town. If he's not there, check the kitchen! Dude loves his research, so sometimes you'll find him hanging around the Community Center or near Robin's sawmill outdoors. Just don't look for him in the mines, he's more into flora and fauna than fighting slimes.
Honestly, why bother? Just send him a letter or wait for a festival. He'll show up eventually.
Good luck finding him, he's probably lost in his research. But seriously, Carpenter's Shop is your best bet.
